Lunch

So why not kick off the first 'real' post of this blog with something everyone loves... Food.

The other night we were having a hard time deciding what to have for dinner, and Tim (husband) came up with chicken salad sandwiches. They were amazing, and I'd forgotten just how much I love chicken salad. I made it again for lunch today, and thought maybe someone reading this would like the recipe. Chicken salad is super easy to make, and a great make-ahead time saver.

Chicken Salad Sandwich Recipe 

This will make about 6 sandwiches.

What you will need:
  • 2 chicken breasts (boneless/skinless) cubed
  • 1/2 a small red onion, chopped
  • 1 celery stalk, chopped
  • 1 tomato (I used roma), cubed
  • about 1/4 of an english cucumber (the long skinny ones), cubed
  • About 4 tbsp of mayonnaise (or to consistency and taste)
  • 6 Buns (I used a bagel, but french bread, or whatever your favourite bun is works!)
How to prepare the chicken:
  • Boil the chicken breasts whole in water for about 10 minutes (or until fully cooked)
  • Let chicken cool to room temperature, then cube in to 1/2 inch pieces or smaller.
Instructions:
  • Mix chicken, onion, celery, tomato and cucumber with the mayonnaise. It's best if you do this to taste or consistency, so start with 2 tbsp and see if that's enough for you, or if you'd like it to be more saucy.
  • Put the mixture in a bun, use a dash of salt and pepper, enjoy!
This recipe is pretty versatile. This is just a very simple version, but you can add whatever veggies you like, or put the chicken salad in the bun with some lettuce and tomato. You can also eat it as a salad without a bun. Delicious!
